Tiki cocktails aren't strictly reserved for the rum lovers. In fact, whisky can make awesome tiki cocktails, as demonstrated here with the Freaki Tiki, made with Perth Whisky. This cocktail is sweetened with a modified version of orgeat. Orgeat is an almond syrup that can sometimes take many ingredients to make. In this case, we’ve simplified it to only almond milk and sugar. The nuttiness and Allspice Bitters add a nice complexity to the Perth Whisky and when mixed with some pineapple juice, you truly get a Polynesian tiki style cocktail with tropical fruit and spice mingling together.
- 1.5 oz Perth Whisky
- 1 oz Almond Milk Syrup
- ¾ oz Lime Juice
- 3 Dashes Top Shelf Allspice Bitters
- 3 ½ oz Pineapple Juice
In a shaker tin filled with ice, add all of the ingredients. Shake vigorously for 15 seconds. Strain into an ice filled Collins glass. Garnish with dehydrated pineapple.
