Much like the 3-year-old thoroughbreds racing this Saturday at Churchill Downs, we are taking out our 3-year-old blended Whisky for consideration. Aged in American Oak Casks sourced from heritage cooperages in Kentucky, our Ontario corn based Canadian Whisky comes out the gate exceptionally smooth and slightly sweet -- much like the bourbons famously produced from the southern state. It finishes strong with nuanced notes of oak and caramel, sporting a deep golden hue.

At 87 proof it makes the perfect distillate for Mint Juleps, famously made as the official drink companion to the Kentucky Derby since 1939. Ensuring a high proofed whisky will help preserve the ice from melting too fast. Garnishing with fresh mint is a must. Make sure to use a short straw and deeply savour the fresh aromatics.

Fascinators aren't necessary with this straight forward cocktail recipe, but always encouraged!
 

Classic Mint Julep

 In a rocks glass or julep tin, add the simple syrup and mint leaves. Muddle gently to extract the oils of the mint leaves. Add the bourbon and 2 dashes of bitters. Fill glass with crushed ice. Add 2 dashes of bitters over the mound of ice and garnish with a heavy hand of mint.
