Honey Ginger Syrup

 


You already know our honey syrup: some have called it a show-stopping concoction, and we would have to agree. But, you wanted more. The gorgeous, simplistic, earthy tones of the honey and its floral highlights simply aren't cutting it anymore. It needs a tad enhancing. You asked, we listened, so we present to you… our honey ginger syrup! The warmness of the ginger perfectly complements the honey, bringing you a completely updated, revolutionized, and entirely simple syrup for all your favourite cocktails.


INGREDIENTS

  • 1 cup water
  • ½ cup honey
  • 40 g fresh-sliced ginger (about the size of your palm)

DIRECTIONS

  1. In a saucepan, add water and heat to a boil.
  2. Add ginger.
  3. Let boil for 10–15 minutes until the water has become a dark golden colour and the air is fragrant.
  4. Strain into a small bowl while still hot.
  5. In a mixing bowl, add ½ cup of honey and ¼ cup of the hot ginger water.
  6. Stir until blended.
  7. Store in an airtight container (glass works best) and let cool before refrigerating.
    Keeps for one week.
