Demerara Syrup

 


Demerara syrup (pronounced dem-uh-rahr-uh) has a rich flavour profile with deeper, darker notes than simple syrup, and pairs great with dark liquors such as whisk(e)y, rum, and brandy. It is reminiscent of molasses and quite sweet. The version in this recipe is called a "rich" syrup, meaning it calls for twice the amount of sugar as there is water.


INGREDIENTS

  • 1 cup water
  • 2 cups demerara (brown) sugar

We use "1 cup" as a placeholder measurement—any 2:1 ratio will work just fine!


DIRECTIONS

  1. Add sugar and water to a saucepan over medium-high heat.
  2. Simmer until the sugar has fully dissolved and the liquid has become clear.
  3. Let cool at room temperature.
  4. Keep in an airtight container (glass works best).
  5. Refrigerate.
    Keeps for one week.

    NOTE

      For "regular" demerara syrup, follow steps above but use: 1 part sugar 1 part water. This will result in a thinner and less rich syrup.
