It's been a long wait, but it's back! We're so excited to share this batch of whisky with you. 

Perth, Ontario has a deep and storied connection to Canadian whisky. European migration to Ontario brought a lot of new things with it but we consider whisky production to be the frontrunner.

With three distilleries in town in the late 19th and early 20th century, Perth was once a major hub for Ontario whisky. This changed with the introduction of the Ontario Temperance Act in 1916 which brought the prohibition of alcohol to the province and forced distillers to either close their doors or operate in secret.

We work with an excellent cooperage in Louisville, Kentucky that caters to craft distillers. We make trips down south frequently to buy barrels and speak with the team at Kelvin Cooperage about new ideas for aging and finishing our whisky. We’ve set our sights on finishing our next batch of three & ½ year whisky in an Oloroso Sherry cask. The fortitude of Canadian Whisky paired with the rich and sweet addition that comes with a sherry cask finish.
